Jambalaya Variant
Ingredients:

* 1 1/2 T. olive oil
* 1 1/2 lbs. yellow onion, cut 1/4" wide strips
* 3 T. garlic, chopped
* 1/2 lb. assorted bell peppers, coarsely diced
* 1/2 lb. fenugreek (also known as fennel or anise), coarsley diced
* 1/2 lb. ham, cut 1/2" cubes
* 1 lb. kielbasa, cut 1/4" thick
* 1/2 lb. oven-roasted turkey breast, cut 1/2" cubes
* 1/2 lb. imitation crab chunks, broken up
* 28 oz. crushed tomatoes
* 1/2 bunch fresh cilantro, chopped
* 1/2 T. sea salt
* 1/2 T. beef base or 2 bouillon cubes
* 1 1/2 T. cayenne pepper
* 1 t. fresh ground pepper
* 1/2 t. ground sage
* 3 lbs. brown basmati rice

Procedure:

Put olive oil in 2 gallon pot and saute onions, garlic, and peppers until onions are translucent. Add in ham and keilbasa and let brown for 5 minutes. Add in all ingredients except the rice. Add 3 quarts of water, lower heat and let simmer for 10 minutes. Taste for seasoning and add additional seasonings if needed. Add rice and cover. Allow rice to cook for 10 minutes or until most of the liquid is absorbed. If necessary, add more water.
